Conversion Logic
Volume conversions use standard US definitions: 1 cup = 236.588 ml, 1 tbsp = 14.7868 ml, 1 tsp = 4.92892 ml, 1 fl oz = 29.5735 ml. Weight conversions use 1 oz = 28.3495 g. Volume-to-weight (ingredient) conversions multiply the volume in ml by an ingredient-specific density value (g/ml): water 1.0, milk 1.03, all-purpose flour 0.53, granulated sugar 0.85, butter 0.959, cooking oil 0.92, honey 1.42.
Fun Fact: A “cup” of flour can weigh anywhere from 4 to 5 ounces (113 to 142 grams) depending on how it is scooped and whether it is sifted, which is why professional bakers always weigh their ingredients.
