About the Food Yield Calculator
Yield percentage is the usable (edible portion, EP) weight divided by the as-purchased (AP) weight, times 100. A 12 lb brisket that trims to 9 lb has a 75.0% yield, so the $51.48 paid works out to $5.72 per usable pound instead of the $4.29 per pound on the invoice, 33.3% more.
Frequently asked questions
- How do you calculate edible portion cost?
- Divide the total price by the usable weight, or divide the as-purchased price per pound by the yield as a decimal. Both give the same figure: $51.48 ÷ 9 lb and $4.29 ÷ 0.75 are each $5.72 per usable pound.
- What is the difference between AP and EP weight?
- AP (as purchased) is the weight you paid for; EP (edible portion) is what is left after trimming, peeling or boning. Enter AP as the purchased weight and EP as the usable weight, and the difference is the waste.
- Why does the cost increase depend only on the yield?
- Because every usable pound has to pay for the trim that came off it. At 75% yield each usable pound costs 1 ÷ 0.75 = 1.333 times the purchase price, a 33.3% increase, whether the meat cost $4 or $14 a pound. At 80% yield the increase is 25%; at 60%, 66.7%.
- How much should I buy to end up with a set weight after trimming?
- Divide the weight you need by the yield as a decimal. Enter a trim test, then type the trimmed weight the recipe calls for in Weight needed: 18 lb of usable brisket at 75% means buying 24.00 lb, which costs $102.96 at $4.29/lb. At 80% yield, 20 lb usable means buying 25.00 lb.
- Does the yield include cooking loss?
- No. It covers one trim test, raw weight in and raw usable weight out. Weight lost in the oven or on the grill is a second yield, so weigh the cooked product and run the calculator again with the trimmed weight as the purchased weight.
